Description

Ingredients

  • 2 slices whole grain or sourdough bread
  • 1 ripe avocado
  • 2 eggs
  • Salt, to taste
  • Pepper, to taste
  • Squeeze of lemon juice
  • Optional toppings: Fresh herbs (chives or dill), chili oil, feta cheese

Instructions

  1. Toast the bread until golden brown and crispy.
  2. Slice the avocado, remove the pit, and scoop the flesh into a bowl. Mash it gently with a fork, adding salt, pepper, and a squeeze of lemon juice.
  3. Fill a small pot with water, add a splash of vinegar, and bring to a gentle simmer. Crack an egg into a small bowl, and carefully slide it into the simmering water. Cook for about 3-4 minutes until the white is set but the yolk remains runny.
  4. Spread a generous layer of mashed avocado on the toasted bread and top with the poached egg.
  5. Add your chosen toppings and serve immediately.
