- 2 slices whole grain or sourdough bread
- 1 ripe avocado
- 2 eggs
- Salt, to taste
- Pepper, to taste
- Squeeze of lemon juice
- Optional toppings: Fresh herbs (chives or dill), chili oil, feta cheese
Instructions
- Toast the bread until golden brown and crispy.
- Slice the avocado, remove the pit, and scoop the flesh into a bowl. Mash it gently with a fork, adding salt, pepper, and a squeeze of lemon juice.
- Fill a small pot with water, add a splash of vinegar, and bring to a gentle simmer. Crack an egg into a small bowl, and carefully slide it into the simmering water. Cook for about 3-4 minutes until the white is set but the yolk remains runny.
- Spread a generous layer of mashed avocado on the toasted bread and top with the poached egg.
- Add your chosen toppings and serve immediately.
Notes
For a lighter version, substitute avocado with hummus or Greek yogurt.
