- 2 ripe avocados
- 4 fresh eggs
- Optional cheese (feta, cheddar, or Parmesan)
- Fresh herbs (chives, parsley, or cilantro)
- Salt
- Pepper
- Hot sauce or paprika
Instructions
- Preheat your oven to 425°F (220°C).
- Slice the avocados in half and remove the pit. Scoop out a bit of flesh if the egg doesn’t fit comfortably.
- Place the avocado halves in a baking dish to prevent tipping.
- Crack an egg into each half. Sprinkle with salt, pepper, and herbs. Add cheese if desired.
- Bake in the oven for 15-20 minutes or until the egg whites are set, yolks still runny.
- Broil for an additional 1-2 minutes for a beautifully browned top.
- Enjoy topped with avocado hot sauce or extra herbs!
Notes
Be careful not to overbake the eggs; the whites should be set but the yolks should remain runny for the best texture.
