Description

A comforting and flavorful dish featuring earthy mushrooms and nutty farro, baked to perfection with thyme.


Ingredients

  • 1 cup farro
  • 2 cups mixed mushrooms (cremini and shiitake)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 cups vegetable or chicken broth
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and sauté for another minute until fragrant.
  4. Add mixed mushrooms and cook until caramelized, about 8-10 minutes.
  5. Stir in the rinsed farro, coating it with the mushroom and garlic mixture.
  6. Add thyme and pour in the broth. Bring to a gentle simmer, then cover and reduce heat to low for about 15 minutes.
  7. Transfer everything to a greased baking dish and cover with foil. Bake for 30-35 minutes, until farro is tender.
  8. Remove from the oven, stir gently, and let rest for a few minutes before serving.

Notes

For a gluten-free version, substitute farro with wild rice or brown rice. Adding vegetables like spinach or kale can enhance nutrition and color.
