- 1 cup farro
- 2 cups mixed mushrooms (cremini and shiitake)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 cups vegetable or chicken broth
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add minced garlic and sauté for another minute until fragrant.
- Add mixed mushrooms and cook until caramelized, about 8-10 minutes.
- Stir in the rinsed farro, coating it with the mushroom and garlic mixture.
- Add thyme and pour in the broth. Bring to a gentle simmer, then cover and reduce heat to low for about 15 minutes.
- Transfer everything to a greased baking dish and cover with foil. Bake for 30-35 minutes, until farro is tender.
- Remove from the oven, stir gently, and let rest for a few minutes before serving.
Notes
For a gluten-free version, substitute farro with wild rice or brown rice. Adding vegetables like spinach or kale can enhance nutrition and color.
