Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1 cup whole milk (or oat milk)
- 1/2 cup vegetable oil (or melted butter)
- 1 cup crushed Oreos
- Extra Oreos for topping
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with paper liners or grease it lightly.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
- In another bowl, combine the eggs, milk, and vegetable oil, whisk until well combined.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined; don’t overmix.
- Fold in the crushed Oreos gently, keeping some chunks intact.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Press a whole Oreo into the top of each muffin, if desired.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack.
Notes
For lighter muffins, make sure all ingredients are at room temperature and avoid overmixing the batter.
