Description

Deliciously moist and rich muffins filled with creamy Oreo chunks, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup whole milk (or oat milk)
  • 1/2 cup vegetable oil (or melted butter)
  • 1 cup crushed Oreos
  • Extra Oreos for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
  3. In another bowl, combine the eggs, milk, and vegetable oil, whisk until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined; don’t overmix.
  5. Fold in the crushed Oreos gently, keeping some chunks intact.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Press a whole Oreo into the top of each muffin, if desired.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool in the pan for 5 minutes before transferring to a wire rack.

Notes

For lighter muffins, make sure all ingredients are at room temperature and avoid overmixing the batter.
