Ingredients

- 2 ripe bananas
- 1 cup all-purpose flour
- 2 tsp baking powder
- 2 large eggs
- 1 cup whole milk
- 2 tbsp unsalted butter, melted
- 2 tbsp granulated sugar
- Pinch of salt
Instructions
- Peel and mash the ripe bananas in a medium-sized bowl until chunky.
- In another bowl, mix flour, sugar, baking powder, and salt until well combined.
- In a third bowl, whisk together the mashed bananas, eggs, melted butter, and milk until smooth.
- Gradually stir the dry ingredients into the wet mixture, being careful not to overmix.
- Preheat a non-stick skillet or griddle to medium heat.
- Scoop about 1/4 cup of batter onto the skillet for each pancake.
- Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown.
- Serve immediately with maple syrup or your favorite toppings.
Notes
For extra flavor, consider adding cinnamon or vanilla extract. Keep cooked pancakes warm in an oven set to the lowest temperature while finishing the batch.
