Ingredients
Scale
- 2 ripe bananas
- 1 cup all-purpose flour (or whole wheat flour)
- 1 cup milk (whole, almond, or buttermilk)
- 2 eggs (or ground flaxseed for vegan)
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1 tbsp sugar (optional)
Instructions

- Add milk, eggs, and vanilla extract to the mashed bananas and whisk until well combined.
- In a separate bowl, whisk together flour, baking powder, and sugar (if using).
- Gently fold the dry ingredients into the wet mixture until just combined.
- Preheat a non-stick skillet or griddle over medium heat, lightly greased with butter or oil.
- Pour about half a cup of batter onto the griddle and cook until bubbles form on the surface, about 2-3 minutes.
- Carefully flip the pancake and cook for an additional 2 minutes or until golden brown.
- Serve warm with powdered sugar, fresh fruits, or syrup.
Notes
For added flavor, consider mixing in chopped walnuts or chocolate chips. Ensure bananas are well-ripened for best sweetness.
