Description

Delightful ice cream bars bursting with fresh berries and creamy goodness, perfect for summer afternoons.

Ingredients

Scale
  • 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 1/4 cup honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract (optional)
  • Optional: crushed nuts, chocolate chips, or mint for garnish

Instructions

  1. Prepare the berries: Rinse and pat dry. Slice larger strawberries into smaller pieces.
  2. Blend the mixture: Combine berries, cream, sweetener, and vanilla in a blender. Blend until smooth but chunky.
  3. Pour into molds: Transfer the mixture into silicone molds or a lined dish, spreading it evenly.
  4. Freeze: Place in the freezer for at least 240 minutes or until completely solid.
  5. Serve up: Remove from molds, cut into bars, and enjoy immediately or store in the freezer for later.

Notes

Using ripe, in-season berries will enhance flavor. Let the mixture chill before pouring into molds for extra creaminess.
