Ingredients

- 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
- 1 cup heavy cream (or coconut cream for dairy-free)
- 1/4 cup honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract (optional)
- Optional: crushed nuts, chocolate chips, or mint for garnish
Instructions
- Prepare the berries: Rinse and pat dry. Slice larger strawberries into smaller pieces.
- Blend the mixture: Combine berries, cream, sweetener, and vanilla in a blender. Blend until smooth but chunky.
- Pour into molds: Transfer the mixture into silicone molds or a lined dish, spreading it evenly.
- Freeze: Place in the freezer for at least 240 minutes or until completely solid.
- Serve up: Remove from molds, cut into bars, and enjoy immediately or store in the freezer for later.
Notes
Using ripe, in-season berries will enhance flavor. Let the mixture chill before pouring into molds for extra creaminess.
