- 8 Biscoff cookies, crushed
- 1/2 cup unsalted butter, melted
- 1 cup whipped cream or Greek yogurt
- 1/2 cup chopped almonds or pecans
- 1/4 cup caramel sauce
Instructions
- Crush the Biscoff cookies into coarse crumbs using a food processor or by rolling a rolling pin over a ziplock bag.
- Roughly chop your choice of nuts.
- In a bowl, combine the crushed cookies with melted butter and mix until damp sand consistency. Press into the bottom of a serving dish.
- Fold whipped cream or yogurt with a teaspoon of vanilla and spoon over the cookie base.
- Drizzle caramel sauce over the cream layer and sprinkle chopped nuts on top.
- Refrigerate for 2-3 hours to set, then serve chilled.
Notes
For an extra flavor, consider adding cinnamon or nutmeg to the cookie mixture.
