Description

A vibrant, moist cake infused with the bright flavors of blood oranges and the warm spice of cardamom, perfect for any gathering.

Ingredients

Scale
  • 3 blood oranges (juiced and zested)
  • 1/2 cup extra virgin olive oil
  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cardamom
  • 3 large eggs
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with olive oil or line it with parchment paper.
  2. In a bowl, combine the flour, baking powder, ground cardamom, and salt; whisk and set aside.
  3. In another large bowl, whisk together the granulated sugar and eggs until pale and fluffy, about 3 minutes.
  4. Slowly drizzle in the olive oil, mixing continuously until emulsified.
  5. Add blood orange juice and zest, then stir until just combined.
  6. Gradually fold in the dry ingredients using a spatula, avoiding overmixing.
  7. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Consider glazing with powdered sugar and blood orange juice for an extra citrusy finish.
