- 2 crisp Fuji or Honeycrisp apples, chopped
- 1 cup walnuts or pecans, toasted
- 1/2 cup dried cranberries or raisins
- 1/4 cup lemon juice
- 2 tablespoons honey or maple syrup
- 1 tablespoon Dijon mustard
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Prepare the components: wash and cut the broccoli into bite-sized florets, then steam them lightly for 2-3 minutes.
- Slice the apples into thin slices or bite-sized cubes, and toss with a bit of lemon juice to prevent browning.
- Toast the nuts in a skillet over medium heat for 5-7 minutes until golden and fragrant.
- Whisk together the lemon juice, honey, Dijon mustard, and olive oil until well combined. Season with salt and pepper.
- In a large bowl, mix the broccoli, apples, toasted nuts, and dried fruits. Drizzle dressing over and toss to coat.
- Let the salad chill in the fridge for about 30 minutes before serving.
- Give it a gentle toss and adjust seasoning if needed before serving.
Notes
Feel free to substitute broccoli with cauliflower or Brussels sprouts, and swap nuts for sunflower seeds if allergies are a concern.
