Description

  • 2 crisp Fuji or Honeycrisp apples, chopped
  • 1 cup walnuts or pecans, toasted
  • 1/2 cup dried cranberries or raisins
  • 1/4 cup lemon juice
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the components: wash and cut the broccoli into bite-sized florets, then steam them lightly for 2-3 minutes.
  2. Slice the apples into thin slices or bite-sized cubes, and toss with a bit of lemon juice to prevent browning.
  3. Toast the nuts in a skillet over medium heat for 5-7 minutes until golden and fragrant.
  4. Whisk together the lemon juice, honey, Dijon mustard, and olive oil until well combined. Season with salt and pepper.
