- 1 brownie mix or homemade brownies made with unsweetened cocoa powder, butter, eggs, and sugar
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 3 large eggs
- 1 tsp pure vanilla extract
- 1 cup chocolate chips (mini or regular)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch springform pan and line the bottom with parchment paper.
- Prepare the brownie batter according to package or recipe instructions and pour into the prepared pan.
- Bake in the oven for 20-25 minutes until a toothpick comes out with a few moist crumbs.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Gradually add sugar, then mix in sour cream and vanilla extract.
- Add eggs one at a time, mixing gently to avoid overmixing.
- Pour the cheesecake mixture over the baked brownie base and spread evenly.
- Bake for an additional 45-55 minutes until the center jiggles slightly.
- Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.
- Cool completely, then refrigerate for at least 4 hours, preferably overnight.
- Run a knife around the edges, release the sides of the springform pan, and slice to serve.
Notes
For a gluten-free option, use almond flour or a gluten-free brownie mix. Substitute sour cream with plain Greek yogurt for a lighter filling.
