- 1 cup unsalted butter, room temperature
- 2 large eggs
- 1 teaspoon baking soda

- 1 can sweetened condensed milk (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and baking powder. Gradually add to the wet ingredients.
- Scoop heaping tablespoons of dough onto prepared sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are golden and centers are soft.
- Cool the cookies on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
- Spread butterscotch filling between two cookies once cooled.
- Optional: Dust with sea salt before serving.
