Ingredients
Scale
- 1 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 cups all-purpose flour
- 1 cup pecans, finely chopped
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, beat the softened butter and powdered sugar together until light and fluffy (about 2-3 minutes).
- Stir in the vanilla extract and a pinch of salt until well blended.
- Gradually add the all-purpose flour and finely chopped pecans, mixing until just combined.
- Roll the dough into 1-inch balls and place on a parchment-lined baking sheet, spaced about an inch apart.
- Bake for 10-12 minutes or until the edges are lightly golden, being careful not to over-bake.
- Let them cool for a few minutes, then roll warm cookies in powdered sugar.
- Cool completely on a wire rack and dust with more powdered sugar if desired.
Notes
Ensure butter is softened, not melted, for the best texture. Cool cookies adequately before dusting with powdered sugar.
