Description

Ingredients

  • 1 lb smoked sausage (andouille or kielbasa)
  • 4 medium potatoes (Yukon gold or russet), diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or milk
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tsp oregano
  • 1/2 tsp cayenne pepper
  • Fresh parsley or green onions, for garnish
  • Optional: carrots and celery

Instructions

  1. In a large pot over medium heat, add a bit of olive oil and cook sliced sausage until browned and fragrant for about 5-7 minutes.
  2. Add chopped onions, bell pepper, and minced garlic. Sauté for 3-5 minutes until softened.
  3. Sprinkle paprika, thyme, and cayenne over the sautéed ingredients and let them mingle for a minute.
  4. Pour in the diced potatoes and broth, bringing the mixture to a boil. Reduce the heat to low and let it simmer for 15-20 minutes, or until the potatoes are tender.
  5. Stir in heavy cream or milk and cook for a few more minutes to heat through. Taste and adjust seasoning as needed.
  6. Ladle the soup into bowls and serve hot, garnished with fresh herbs.

Notes

Feel free to adjust the spices and add more vegetables based on your preferences. For a vegan version, substitute sausage with mushrooms and use vegetable broth while omitting the cream.
