- 1 lb smoked sausage (andouille or kielbasa)
- 4 medium potatoes (Yukon gold or russet), diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or milk
- 1 tsp paprika
- 1 tsp thyme
- 1 tsp oregano
- 1/2 tsp cayenne pepper
- Fresh parsley or green onions, for garnish
- Optional: carrots and celery
Instructions
- In a large pot over medium heat, add a bit of olive oil and cook sliced sausage until browned and fragrant for about 5-7 minutes.
- Add chopped onions, bell pepper, and minced garlic. Sauté for 3-5 minutes until softened.
- Sprinkle paprika, thyme, and cayenne over the sautéed ingredients and let them mingle for a minute.
- Pour in the diced potatoes and broth, bringing the mixture to a boil. Reduce the heat to low and let it simmer for 15-20 minutes, or until the potatoes are tender.
- Stir in heavy cream or milk and cook for a few more minutes to heat through. Taste and adjust seasoning as needed.
- Ladle the soup into bowls and serve hot, garnished with fresh herbs.
Notes
Feel free to adjust the spices and add more vegetables based on your preferences. For a vegan version, substitute sausage with mushrooms and use vegetable broth while omitting the cream.
