- 8 flour tortillas

Instructions
- Prepare the Potatoes: Peel and dice the potatoes into small cubes.
- Cook the Potatoes: Boil the diced potatoes in salted water until fork-tender, about 15-20 minutes. Drain and allow to steam dry.
- Mash and Mix: In a large bowl, mash the cooked potatoes until smooth. Stir in minced garlic and shredded cheese. Season with cumin and salt.
- Assemble the Burritos: Lay a tortilla flat, scoop a generous amount of the cheesy potato mixture in the center, fold in the sides, and roll it up tightly.
- Cook the Burritos: Heat a skillet over medium heat and cook the burritos seam-side down until golden brown, about 3-4 minutes on each side.
