Description

Delicious and comforting meatloaf bites stuffed with gooey cheese, perfect for gatherings or family dinners.


Ingredients

  • 1 lb ground beef (80/20)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup breadcrumbs (gluten-free if desired)
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Optional: finely diced onions, bell peppers, or mushrooms

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, minced garlic, herbs, salt, and pepper. Mix gently until just combined.
  3. Set aside the shredded cheese for filling.
  4. With greased hands, take a handful of the meat mixture, flatten it, place about a tablespoon of cheese in the center, and wrap the meat around it to form small balls.
  5. Arrange the bites on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until the internal temperature reaches 160°F (70°C).
  6. Allow to cool for a few minutes before serving. Pair with marinara sauce for dipping, if desired.

Notes

To avoid dryness, don’t overcook the meatloaf bites. Let them rest after baking for juicy bites.
