Delicious and comforting meatloaf bites stuffed with gooey cheese, perfect for gatherings or family dinners.
Ingredients

- 1 lb ground beef (80/20)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup breadcrumbs (gluten-free if desired)
- 1 large egg
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Optional: finely diced onions, bell peppers, or mushrooms
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine ground beef, breadcrumbs, egg, minced garlic, herbs, salt, and pepper. Mix gently until just combined.
- Set aside the shredded cheese for filling.
- With greased hands, take a handful of the meat mixture, flatten it, place about a tablespoon of cheese in the center, and wrap the meat around it to form small balls.
- Arrange the bites on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until the internal temperature reaches 160°F (70°C).
- Allow to cool for a few minutes before serving. Pair with marinara sauce for dipping, if desired.
Notes
To avoid dryness, don’t overcook the meatloaf bites. Let them rest after baking for juicy bites.
