- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 cup crushed pistachios
- 2 cups cherries, fresh or frozen
- 1 tbsp vanilla extract
- 1.5 cups graham cracker crumbs
- 1/2 cup butter, melted
- 3 large eggs
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter until evenly moistened. Press this mixture into the bottom of a springform pan for a solid base. Bake for 10 minutes until golden and fragrant, then cool completely.
- In another bowl, beat the cream cheese and sugar until creamy. Add sour cream and vanilla extract, mixing until combined.
- Gradually add each egg, beating on low speed just until incorporated.
- Gently fold in half of the crushed pistachios and two-thirds of the cherries.
- Pour the filling over the cooled crust, smoothing the top. Bake for 45-50 minutes, until the center is just set but still slightly jiggly. Turn off the oven, crack the door, and cool the cheesecake inside for an hour.
- Refrigerate for at least 4 hours or overnight. Top with remaining cherries and crushed pistachios before serving.
Notes
Ensure all ingredients are at room temperature for a smooth filling. Use a water bath during baking for even cooking.
