Description

Ingredients

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 cup crushed pistachios
  • 2 cups cherries, fresh or frozen
  • 1 tbsp vanilla extract
  • 1.5 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 3 large eggs

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter until evenly moistened. Press this mixture into the bottom of a springform pan for a solid base. Bake for 10 minutes until golden and fragrant, then cool completely.
  3. In another bowl, beat the cream cheese and sugar until creamy. Add sour cream and vanilla extract, mixing until combined.
  4. Gradually add each egg, beating on low speed just until incorporated.
  5. Gently fold in half of the crushed pistachios and two-thirds of the cherries.
  6. Pour the filling over the cooled crust, smoothing the top. Bake for 45-50 minutes, until the center is just set but still slightly jiggly. Turn off the oven, crack the door, and cool the cheesecake inside for an hour.
  7. Refrigerate for at least 4 hours or overnight. Top with remaining cherries and crushed pistachios before serving.
