- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 cup granulated sugar
- 2 cups fresh cherries, pitted
- 1 cup pistachios, chopped (plus more for garnish)
- 1 tsp vanilla extract
- 3 large eggs
- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs with melted butter and sugar until it resembles wet sand. Press it into a springform pan.
- Blend cream cheese and sugar until smooth. Gradually add eggs, mixing in sour cream, vanilla, and most of the chopped pistachios.
- Fold in the cherries and pour the filling over the crust.
- Bake for 45-50 minutes, until edges are set but the center is slightly jiggly.
- Turn off the oven, crack the door, and cool gradually before refrigerating for at least 4 hours.
- Top with reserved pistachios and serve.
Notes
For best results, use room temperature ingredients and chill the cheesecake overnight for optimal texture and flavor.
