Description

A delightful Cherry Pistachio Cheesecake combining creamy richness with sweet-tart cherries and crunchy pistachios, perfect for family gatherings.


Ingredients

  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 2 cups fresh cherries, pitted
  • 1 cup pistachios, chopped (plus more for garnish)
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 ½ cups graham cracker crumbs
  • ½ cup melted butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs with melted butter and sugar until it resembles wet sand. Press it into a springform pan.
  3. Blend cream cheese and sugar until smooth. Gradually add eggs, mixing in sour cream, vanilla, and most of the chopped pistachios.
  4. Fold in the cherries and pour the filling over the crust.
  5. Bake for 45-50 minutes, until edges are set but the center is slightly jiggly.
  6. Turn off the oven, crack the door, and cool gradually before refrigerating for at least 4 hours.
  7. Top with reserved pistachios and serve.
