- 1 cup pumpkin puree
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 cup chocolate chips (semi-sweet or dark)
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the butter and sugars together in a mixing bowl until light and fluffy.
- Add the pumpkin and egg, mixing until fully incorporated.
- Sift the dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and spices.
- Gradually combine products: Slowly add the dry mixture to the pumpkin mixture, just until combined.
- Stir in chocolate chips, being careful not to overmix.
- Scoop the dough onto the prepared baking sheet; maintain about two tablespoons per cookie.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Cool on a wire rack before serving.
Notes
For extra flavor, consider chilling the dough for an hour before baking. Double the batch since they disappear quickly!
