- 2 cups boneless chicken (breast or thighs), diced
- 8 slices bacon, chopped
- 1 cup creamy ranch dressing
- 24 oz frozen tater tots
- 2 cups shredded cheddar cheese
- 1/4 cup chopped green onions
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, cook the chopped bacon until crispy. Transfer to a plate lined with paper towels, leaving the fat in the skillet.
- Add the diced chicken to the skillet and cook until no longer pink, about 5–7 minutes. Season with salt, pepper, and ranch seasoning.
- Pour in the ranch dressing and mix until well coated. Fold in the crispy bacon.
- Spread the chicken and bacon mixture evenly in a greased 9×13 inch baking dish.
- Top with a layer of frozen tater tots and then sprinkle shredded cheddar on top.
- Bake for 25–30 minutes until the tater tots are golden and crispy, and the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
This dish can be customized with veggies like cauliflower or mushrooms for a vegetarian twist. Substitute turkey bacon for a lighter option.
