A delightful Chicken Gyro Bowl that combines marinated chicken, earthy mushrooms, and a refreshing tzatziki sauce, perfect for a family meal or gathering.

- 1 lb boneless chicken breasts or thighs
- 1 cup Greek yogurt
- 3 garlic cloves, minced
- Juice of 1 lemon
- 2 tsp dried oregano
- 1 cucumber, diced
- 1 cup tomatoes, diced
- 1 small red onion, thinly sliced
- 2 cups cooked rice or greens
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional toppings: feta cheese, olives, chili flakes
Instructions
- Marinate the Chicken: Combine minced garlic, lemon juice, olive oil, oregano, salt, and pepper in a bowl. Add the chicken and let it marinate for at least 30 minutes.
- Cook the Chicken: Heat a skillet over medium-high heat. Add oil and the marinated chicken. Sauté for 6-8 minutes per side until cooked through.
- Prepare the Tzatziki: In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill or parsley, salt, and pepper. Adjust seasoning to taste.
- Sauté the Mushrooms: In the same skillet, add more oil and sliced mushrooms. Sauté until golden brown, about 5 minutes. Season with salt and pepper.
- Assemble the Bowls: Start with a base of rice or greens, then layer with chicken, sautéed mushrooms, cucumbers, tomatoes, and onions. Drizzle with tzatziki.
- Garnish and Serve: Add optional toppings and serve warm.
