A comforting and flavorful Chicken Taco Casserole, infused with zesty spices and layered with chicken, cheese, and veggies.

- 2 cups cooked chicken, shredded
- 1 packet taco seasoning
- 1 can cream of chicken soup
- 2 cups tortilla chips
- 1 cup shredded cheddar cheese
- 1 bell pepper, diced
- 1 can black beans, drained
- 1 cup corn
- Fresh cilantro, for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, cook your chicken until no longer pink. Season it with taco seasoning.
- In a large mixing bowl, combine the cooked chicken, cream of chicken soup, black beans, corn, and diced bell pepper. Stir until well-coated.
- In a greased baking dish, layer half of the tortilla chips, followed by half of the chicken mixture and a generous sprinkle of cheddar cheese. Repeat the layers.
- Cover the dish with aluminum foil and bake for about 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
Notes
Feel free to substitute chicken with beef or make it vegetarian by using more vegetables. Adjust the spice level with jalapeños if desired.
