Description

A warm and comforting Chili Mac Casserole, blending macaroni with a rich chili sauce and topped with gooey cheese, perfect for family gatherings.


Ingredients

  • 2 cups elbow macaroni
  • 1 lb ground beef or beans
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups shredded cheese (cheddar or pepper jack)
  • 1 cup bell peppers (optional), diced
  • 1 cup corn (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the macaroni in salted boiling water until slightly underdone; drain.
  3. Sauté onion and garlic in a skillet until translucent.
  4. Brown the ground meat, if using, in the skillet.
  5. Stir in chili powder, tomato sauce, and diced tomatoes; simmer for 10 minutes.
  6. Combine cooked pasta with the meat sauce and half of the cheese.
  7. Transfer to a greased 9×13 inch casserole dish; top with remaining cheese.
  8. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10 minutes.
  9. Let cool for a few minutes before serving.

Notes

Customize by adding other vegetables like spinach or jalapeños according to your preference. Let it rest before serving for best results.
