- 2 cups elbow macaroni
- 1 lb ground beef or beans
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes
- 2 cups shredded cheese (cheddar or pepper jack)
- 1 cup bell peppers (optional), diced
- 1 cup corn (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the macaroni in salted boiling water until slightly underdone; drain.
- Sauté onion and garlic in a skillet until translucent.
- Brown the ground meat, if using, in the skillet.
- Stir in chili powder, tomato sauce, and diced tomatoes; simmer for 10 minutes.
- Combine cooked pasta with the meat sauce and half of the cheese.
- Transfer to a greased 9×13 inch casserole dish; top with remaining cheese.
- Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10 minutes.
- Let cool for a few minutes before serving.
Notes
Customize by adding other vegetables like spinach or jalapeños according to your preference. Let it rest before serving for best results.
