Description

Delicious chocolate cookies with a sweet jam center, reminiscent of family gatherings and cherished memories.


Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup raspberry or apricot jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream butter and both types of sugar in a mixing bowl until creamy and light.
  3. Add the eggs one at a time, mixing well after each addition, then add vanilla extract.
  4. Slowly sift in the flour, cocoa powder, and baking powder, mixing just until combined.
  5. Portion the dough into balls about an inch in size and roll them in sugar.
  6. Place the balls on a baking sheet lined with parchment paper and create an impression in the center using your thumb.
  7. Fill the thumbprints with jam or ganache.
  8. Bake for 12-15 minutes or until edges appear set.
  9. Let cool for a few minutes before transferring to a wire rack.
