- 1 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 2 large eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 cup raspberry or apricot jam
Instructions
- Preheat your oven to 350°F (175°C).
- Cream butter and both types of sugar in a mixing bowl until creamy and light.
- Add the eggs one at a time, mixing well after each addition, then add vanilla extract.
- Slowly sift in the flour, cocoa powder, and baking powder, mixing just until combined.
- Portion the dough into balls about an inch in size and roll them in sugar.
- Place the balls on a baking sheet lined with parchment paper and create an impression in the center using your thumb.
- Fill the thumbprints with jam or ganache.
- Bake for 12-15 minutes or until edges appear set.
- Let cool for a few minutes before transferring to a wire rack.
Notes
For variations, you can use different types of jam or ganache. Ensure to use room temperature ingredients for best results.
