Ingredients

- 1 lb boneless chicken (breast or thighs)
- 8 oz fresh cremini or button mushrooms
- 3 cloves garlic, minced
- 1 onion, finely diced
- 4 cups chicken broth
- 2 carrots, sliced
- 2 celery stalks, sliced
- Fresh thyme or parsley (to taste)
- Salt and pepper (to taste)
- 1 cup cream or milk (optional)
Instructions
- In a large pot, heat some olive oil over medium heat. Add diced onions and minced garlic, sauté until fragrant and golden—about 2-3 minutes.
- Add the diced chicken and cook until browned on all sides. Season your mix with salt and pepper for a flavor base.
- Toss in your sliced mushrooms, along with any other veggies you selected. Sauté for another 5-7 minutes.
- Slowly add in the chicken broth, scraping the bottom of the pot. Bring to a gentle boil.
- Lower the heat and allow the soup to simmer for about 20-30 minutes.
- Just before serving, taste and adjust the seasoning. Add freshly chopped herbs and a splash of cream or milk if desired.
- Ladle the soup into bowls, garnish with more herbs or a sprinkle of pepper, and serve alongside crusty bread.
