A warm and comforting chicken mushroom soup perfect for family gatherings, bursting with flavor and nostalgia.


Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 8 oz fresh cremini or button mushrooms
  • 3 cloves garlic, minced
  • 1 onion, finely diced
  • 4 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • Fresh thyme or parsley (to taste)
  • Salt and pepper (to taste)
  • 1 cup cream or milk (optional)

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add diced onions and minced garlic, sauté until fragrant and golden—about 2-3 minutes.
  2. Add the diced chicken and cook until browned on all sides. Season your mix with salt and pepper for a flavor base.
  3. Toss in your sliced mushrooms, along with any other veggies you selected. Sauté for another 5-7 minutes.
  4. Slowly add in the chicken broth, scraping the bottom of the pot. Bring to a gentle boil.
  5. Lower the heat and allow the soup to simmer for about 20-30 minutes.
  6. Just before serving, taste and adjust the seasoning. Add freshly chopped herbs and a splash of cream or milk if desired.
  7. Ladle the soup into bowls, garnish with more herbs or a sprinkle of pepper, and serve alongside crusty bread.
