- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup ground coffee (dark roast preferred)
- 2 cups all-purpose flour
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).
- Beat in the egg and vanilla extract until well combined.
- Mix in the ground coffee.
- In a separate bowl, whisk together the flour and salt, then gradually add to the butter mixture until just blended.
- Scoop dollops of dough onto a lined baking sheet, leaving space between each.
- Bake for about 10-12 minutes or until the edges turn golden brown.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a twist, add chocolate chips or spices like cinnamon or nutmeg.
