Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 stalks celery, chopped
- 8 ounces mushrooms (cremini, shiitake, or portabello), sliced
- 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery, sauté for 5-7 minutes until softened.
- Stir in mushrooms and garlic, cook for another 5 minutes until mushrooms are golden.
- Add white beans and vegetable broth, bring to a gentle simmer.
- Season with thyme, rosemary, salt, and black pepper, let simmer for 20-30 minutes, stirring occasionally.
- Taste and adjust seasonings if necessary.
- Serve warm with crusty bread or over rice.
Notes
For extra flavor, add a splash of soy sauce or a squeeze of lemon juice before serving.
