Description

Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 8 ounces mushrooms (cremini, shiitake, or portabello), sliced
  • 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery, sauté for 5-7 minutes until softened.
  3. Stir in mushrooms and garlic, cook for another 5 minutes until mushrooms are golden.
  4. Add white beans and vegetable broth, bring to a gentle simmer.
  5. Season with thyme, rosemary, salt, and black pepper, let simmer for 20-30 minutes, stirring occasionally.
  6. Taste and adjust seasonings if necessary.
  7. Serve warm with crusty bread or over rice.
