- 2 boneless chicken breasts or thighs
- 2 tablespoons unsalted butter
- 4 cloves fresh garlic, minced
- 8 oz cremini or button mushrooms, sliced
- 1 cup chicken broth
- 2 tablespoons fresh thyme or parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Heat a large skillet over medium heat and add 1 tablespoon of butter. Season the chicken with salt and pepper, and cook for 6–7 minutes on each side until golden brown and cooked through. Remove chicken and let it rest.
- Add minced garlic and sliced mushrooms to the skillet with additional butter if needed. Sauté for about 5–6 minutes until mushrooms are tender.
- Pour in chicken broth and scrape up any brown bits to deglaze the skillet.
- Return the chicken to the skillet. If necessary, simmer sauce for a minute to thicken.
- Before serving, squeeze lemon juice and sprinkle fresh herbs over the dish.
- Serve warm, ladling chicken and mushrooms onto plates with garlic butter sauce.
Notes
For quicker cooking, allow chicken to come to room temperature before cooking. Avoid overcrowding the skillet for even browning.
