- 2 cups fresh cranberries
- 1 cup sugar
- 3 large eggs
- 1/4 cup fresh lemon juice
- 1/2 cup cold unsalted butter, cubed
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 2–4 tablespoons cold water
- Powdered sugar for dusting
- Fresh cranberries for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine flour and salt. Add cold butter and blend until mixture resembles coarse crumbs.
- Add cold water gradually until dough comes together. Wrap in plastic and refrigerate for 30 minutes.
- In a saucepan, combine cranberries, sugar, and lemon juice. Cook over medium heat until cranberries burst and mixture thickens (about 10 minutes).
- Remove from heat and allow to cool slightly. In another bowl, beat eggs and slowly mix in warm cranberry mixture.
- Pour curd mixture into the prepared crust and bake until set (30-35 minutes).
- Let cool before serving. Dust with powdered sugar or garnish with fresh cranberries.
Notes
Use cold ingredients for a flaky crust. Ensure the curd thickens slightly but remains runny before baking. Allow the tart to cool completely before slicing.
