Description

A delightful dessert featuring a tangy cranberry filling enveloped in a buttery, flaky crust, perfect for holiday gatherings.


Ingredients

  • 2 cups fresh cranberries
  • 1 cup sugar
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1/2 cup cold unsalted butter, cubed
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 24 tablespoons cold water
  • Powdered sugar for dusting
  • Fresh cranberries for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and salt. Add cold butter and blend until mixture resembles coarse crumbs.
  3. Add cold water gradually until dough comes together. Wrap in plastic and refrigerate for 30 minutes.
  4. In a saucepan, combine cranberries, sugar, and lemon juice. Cook over medium heat until cranberries burst and mixture thickens (about 10 minutes).
  5. Remove from heat and allow to cool slightly. In another bowl, beat eggs and slowly mix in warm cranberry mixture.
  6. Pour curd mixture into the prepared crust and bake until set (30-35 minutes).
  7. Let cool before serving. Dust with powdered sugar or garnish with fresh cranberries.

Notes

Use cold ingredients for a flaky crust. Ensure the curd thickens slightly but remains runny before baking. Allow the tart to cool completely before slicing.
