Instructions
- Preheat your oven to 350°F (175°C) and prepare your pie crust according to package instructions if using store-bought.
- In a medium bowl, combine 2 cups of fresh cranberries with 3/4 cup of sugar and toss until well coated. Let sit for about 10 minutes.
- In a separate bowl, whisk together 4 eggs, 1 1/2 cups of heavy cream, 1 teaspoon of vanilla extract, and a pinch of nutmeg until smooth.
- Fold the sugared cranberries into the custard mixture until evenly distributed.
- Pour the filling into the prepared pie crust and bake for 35-40 minutes, until the custard is set but slightly jiggly in the center.
- Allow the pie to cool completely on a wire rack before serving. For best flavor, refrigerate for a few hours or overnight before serving.
