Description

Ingredients

  • 1 whole chicken
  • 2 cups fresh cranberries (or frozen)
  • 1/2 cup pure maple syrup
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken inside and out, patting it dry with paper towels.
  3. In a small bowl, combine maple syrup, minced garlic, salt, and pepper; brush this mixture generously over the chicken.
  4. Place the chicken in a roasting pan, breast-side up, surrounded by fresh cranberries and herbs.
  5. Drizzle olive oil over the cranberries and season them with salt and pepper.
  6. Roast in the preheated oven for approximately 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Baste the chicken with its juices halfway through.
  8. Let the chicken rest for 10-15 minutes before carving.

Notes

For extra crispy skin, turn on the broiler for the last few minutes of cooking but watch closely to prevent burning.
