- 1 whole chicken
- 2 cups fresh cranberries (or frozen)
- 1/2 cup pure maple syrup
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken inside and out, patting it dry with paper towels.
- In a small bowl, combine maple syrup, minced garlic, salt, and pepper; brush this mixture generously over the chicken.
- Place the chicken in a roasting pan, breast-side up, surrounded by fresh cranberries and herbs.
- Drizzle olive oil over the cranberries and season them with salt and pepper.
- Roast in the preheated oven for approximately 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Baste the chicken with its juices halfway through.
- Let the chicken rest for 10-15 minutes before carving.
Notes
For extra crispy skin, turn on the broiler for the last few minutes of cooking but watch closely to prevent burning.
