Description

A delightful quick bread that combines the tartness of cranberries with the bright citrus flavor of fresh oranges, perfect for sharing during the holidays.


Ingredients

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • Pinch of salt
  • Zest and juice of 1 large orange
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 to 1.5 cups fresh or frozen cranberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine the orange zest, orange juice, melted butter, and eggs, whisking until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
  5. Fold in cranberries until evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55-65 minutes, or until a toothpick inserted comes out clean.
  8. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  9. Slice and enjoy warm or toasted.

Notes

For a healthier twist, consider using coconut sugar instead of granulated sugar. You can also replace butter with coconut oil.
