- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- Pinch of salt
- Zest and juice of 1 large orange
- 1/2 cup melted butter
- 2 large eggs
- 1 to 1.5 cups fresh or frozen cranberries
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine the orange zest, orange juice, melted butter, and eggs, whisking until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
- Fold in cranberries until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes, or until a toothpick inserted comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Slice and enjoy warm or toasted.
Notes
For a healthier twist, consider using coconut sugar instead of granulated sugar. You can also replace butter with coconut oil.
