Ingredients

  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 cup extra-virgin olive oil
  • 2 large eggs
  • Zest of 1 orange
  • ½ cup freshly squeezed orange juice
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. In a large bowl, whisk the sugars, olive oil, eggs, and orange zest until smooth.
  4. Add the orange juice to the wet mixture and blend well.
  5. Gradually fold the dry ingredients into the wet mixture, being careful not to overmix.
  6. Fold in the cranberries and transfer the batter to the prepared cake pan.
  7. Bake for about 35-40 minutes or until a toothpick comes out clean.
