- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 1 cup extra-virgin olive oil
- 2 large eggs
- Zest of 1 orange
- ½ cup freshly squeezed orange juice
- 1 cup fresh or frozen cranberries
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan.
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
- In a large bowl, whisk the sugars, olive oil, eggs, and orange zest until smooth.
- Add the orange juice to the wet mixture and blend well.
- Gradually fold the dry ingredients into the wet mixture, being careful not to overmix.
- Fold in the cranberries and transfer the batter to the prepared cake pan.
- Bake for about 35-40 minutes or until a toothpick comes out clean.
- Allow the cake to cool for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve as desired.
