Description

Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 4 cloves fresh garlic, minced
  • 8 oz cremini or button mushrooms, sliced
  • 12 oz wide pappardelle or fusilli pasta
  • Fresh basil or parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Prep Ingredients: Gather all your ingredients and chop your garlic and mushrooms. Cut chicken thighs into bite-sized pieces.
  2. Cook the Pasta: Boil a pot of salted water and cook your pasta until al dente. Reserve about a cup of pasta water before draining.
  3. Sauté Chicken: In a large skillet, melt a tablespoon of butter over medium-high heat. Add chicken pieces, seasoning with salt and pepper. Cook until golden brown, about 6-7 minutes. Remove and set aside.
  4. Sauté Mushrooms and Garlic: In the same skillet, add more butter if needed. Sauté garlic for 30 seconds, then add mushrooms and cook until browned and tender, about 5-7 minutes.
  5. Make the Sauce: Lower the heat, stir in the heavy cream, and add reserved pasta water to adjust sauce consistency.
  6. Combine Everything: Add the cooked chicken and drained pasta back into the skillet, tossing gently over medium heat. Sprinkle with fresh herbs before serving.
  7. Serve Immediately: Plate the pasta generously, optionally topping with grated Parmesan cheese or more herbs.

Notes

You can substitute chicken with shrimp or tofu for variations. Adjust cream with sour cream and broth for a lighter version.
