- 8 oz pasta (fettuccine, penne, or gluten-free)
- 8 oz fresh cremini or shiitake mushrooms, sliced
- 1 cup Gruyere cheese, shredded
- 1 cup heavy cream
- 2 tbsp butter
- 2 shallots, finely chopped
- 2 cloves garlic, minced
- 2 tbsp fresh thyme, chopped
- ¼ cup fresh parsley, chopped
- ¼ cup Parmesan cheese, grated
- Salt and pepper to taste
Instructions
- Cook the Pasta: In a large pot, bring salted water to a boil and cook your pasta according to the package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
- Sauté the Aromatics: In a large skillet, melt butter over medium heat. Add shallots and garlic, sauté for 2-3 minutes until fragrant.
- Add the Mushrooms: Toss in sliced mushrooms, season with salt and pepper, and sauté until golden brown, about 5-7 minutes.
- Create the Cream Sauce: Lower the heat, pour in the heavy cream, and simmer for a couple of minutes. Gradually add Gruyere cheese, stirring until fully melted and the sauce thickens.
- Combine with Pasta: Stir in the cooked pasta, mixing gently to combine. If the sauce is too thick, add reserved pasta water until desired consistency is reached.
- Finishing Touches: Stir in thyme, parsley, and Parmesan cheese. Taste and adjust seasoning as needed.
- Serve and Enjoy: Serve immediately, garnished with additional parsley and Parmesan if desired.
Notes
For a lighter version, substitute heavy cream with half-and-half. You can also use dairy-free cheese for a vegan option.
