A comforting creamy pesto gnocchi dish that combines soft gnocchi with a rich basil pesto sauce.
Ingredients
- Gnocchi (store-bought or homemade)
- Fresh Basil Pesto
- Heavy Cream
- Garlic (minced)
- Parmesan Cheese (grated)
- Olive Oil
- Salt
- Pepper
Instructions
- In a large pot boiling salted water, cook the gnocchi according to package instructions (about 2-3 minutes). Drain and set aside.
- In a skillet over medium heat, warm a drizzle of olive oil, add minced garlic, and sauté until fragrant, about 30 seconds.
- Stir in the basil pesto and heavy cream, and allow it to simmer for 5-7 minutes.
- Gently fold the cooked gnocchi into the sauce, ensuring they’re well coated.
- Add salt and pepper to taste, finishing with grated Parmesan. Warm through for a couple more minutes.
- Serve garnished with extra basil or a drizzle of olive oil.
Notes
For a lighter version, substitute heavy cream with half-and-half or whole milk. Serve with a side of garlic bread or salad.
