Instructions
- Prepare the Pesto: In a food processor, combine basil, garlic, pine nuts, and parmesan. Drizzle in olive oil while processing until smooth. Season with salt and pepper, then set aside.
- Cook the Gnocchi: In a pot of salted boiling water, cook gnocchi according to package instructions, about 2-3 minutes until they float.
- Sauté the Garlic: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Create the Creamy Base: Pour in heavy cream, stirring to combine, and let it simmer for 3-4 minutes.
- Combine the Flavors: Stir in the prepared pesto and the cooked gnocchi, tossing gently to coat.
- Finish with Cheese: Stir in grated parmesan until melted. Adjust seasoning with salt and pepper.
