- 1 lb smoked sausage or Italian sausage, sliced
- 2 large Russet or Yukon Gold potatoes, peeled and diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 tbsp butter
- 1 tsp fresh thyme or parsley, chopped
- Salt and pepper, to taste
Instructions
- Prepare the Ingredients: Peel and dice the potatoes, dice the onion, and mince the garlic.
- Sauté the Sausage: In a large pot, melt the butter over medium heat. Add the sausage and brown for 5-7 minutes.
- Add the Aromatics: Add the diced onions and minced garlic. Sauté until the onions are translucent (3-4 minutes).
- Incorporate the Potatoes and Broth: Add the diced potatoes and pour in broth. Bring to a boil, then reduce to a simmer.
- Simmer Until Tender: Simmer for 15-20 minutes or until potatoes are fork-tender.
- Create the Creamy Base: Stir in the heavy cream, and season with salt and pepper. Simmer for another 5-10 minutes.
- Finishing Touches: Stir in fresh thyme or parsley before serving.
- Serve: Ladle the chowder into bowls, garnishing as desired.
