- 2 boneless chicken breasts or thighs
- 1 cup heavy cream
- 2 tablespoons fresh tarragon, chopped
- 2 shallots, finely diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Prepare your ingredients by slicing the chicken and chopping the shallots and garlic.
- In a skillet, melt butter over medium heat and add the chicken, cooking until golden on both sides (5-7 minutes). Remove the chicken and set aside.
- In the same skillet, add more butter (if needed), then sauté the shallots and garlic until fragrant (2-3 minutes).
- Pour in the chicken broth and bring to a simmer; stir in the heavy cream and return the chicken to the skillet.
- Allow the chicken to simmer in the sauce for about 10 minutes, then stir in the fresh tarragon just before serving.
- Plate the chicken over rice or pasta, garnished with additional tarragon or a squeeze of lemon, and enjoy.
