  • 1/4 teaspoon thyme
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup white wine (optional)
  • 1/4 cup Parmesan cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the butter beans; chop garlic, mushrooms, and herbs.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add chopped mushrooms and cook down until golden brown and tender.
  4. Pour in vegetable or chicken broth and heavy cream, stirring to combine, bringing to a gentle simmer.
  5. Fold in the drained butter beans; let heat through for 5-7 minutes.

Notes
