- 2 cups butter beans (canned or cooked)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cremini or shiitake mushrooms, chopped
- 1 cup heavy cream
- 1 cup vegetable or chicken broth
- 1/4 cup fresh basil, chopped
- 1/4 teaspoon thyme
- 1/4 cup fresh parsley, chopped
- 1/4 cup white wine (optional)
- 1/4 cup Parmesan cheese (optional)
- Salt and pepper to taste
Instructions
- Rinse and drain the butter beans; chop garlic, mushrooms, and herbs.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add chopped mushrooms and cook down until golden brown and tender.
- Pour in vegetable or chicken broth and heavy cream, stirring to combine, bringing to a gentle simmer.
- Fold in the drained butter beans; let heat through for 5-7 minutes.
- Stir in fresh herbs, add white wine if using, and season with salt and pepper. Optionally, sprinkle in grated Parmesan cheese.
- Serve warm and garnish with extra fresh herbs before plating.
Notes
For a vegan option, replace heavy cream with coconut cream. This dish can also be served as a side with grilled meats or as a vegetarian main course with additional greens.
