Description

Delicious eggrolls filled with spicy black beans, cheddar cheese, and sautéed veggies, baked to crispy perfection.


Ingredients

  • Eggroll wrappers
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup bell peppers, diced
  • 1 onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Cooking spray or additional olive oil for brushing

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a skillet over medium heat, add olive oil and sauté the onions and bell peppers until soft, about 5–7 minutes.
  3. Add the black beans, spices, and cheese, stirring until well combined.
  4. Lay an eggroll wrapper on a clean surface, add filling, and roll tightly, sealing edges with water.
  5. Place eggrolls seam-side down on a parchment-lined baking sheet, brush with olive oil or spray with cooking spray.
  6. Bake for 15–20 minutes, turning halfway, until golden brown and crispy.

Notes

For a meatier version, consider adding ground turkey or chicken. For a plant-based twist, try adding mushrooms or zucchini instead of beans.
