Delicious eggrolls filled with spicy black beans, cheddar cheese, and sautéed veggies, baked to crispy perfection.

- Eggroll wrappers
- 1 can black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1 cup bell peppers, diced
- 1 onion, diced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Cooking spray or additional olive oil for brushing
Instructions
- Preheat your oven to 425°F (220°C).
- In a skillet over medium heat, add olive oil and sauté the onions and bell peppers until soft, about 5–7 minutes.
- Add the black beans, spices, and cheese, stirring until well combined.
- Lay an eggroll wrapper on a clean surface, add filling, and roll tightly, sealing edges with water.
- Place eggrolls seam-side down on a parchment-lined baking sheet, brush with olive oil or spray with cooking spray.
- Bake for 15–20 minutes, turning halfway, until golden brown and crispy.
Notes
For a meatier version, consider adding ground turkey or chicken. For a plant-based twist, try adding mushrooms or zucchini instead of beans.
