- 4 cod fillets, fresh or thawed if frozen
- 1 cup panko breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley or dill, chopped
- 1 lemon, for juice and wedges
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the cod fillets dry with paper towels.
- In a mixing bowl, combine panko breadcrumbs, grated Parmesan, minced garlic, chopped herbs, salt, and pepper. Drizzle in olive oil and mix until crumbly.
- On a greased baking sheet, lay out the cod fillets and generously top with the panko mixture.
- Bake for 12-15 minutes until the fish is cooked through and the crust is golden brown.
- Allow to cool for a couple of minutes, then serve with lemon wedges and your favorite sides.
Notes
For a gluten-free version, substitute panko with gluten-free breadcrumbs. Ensure the fish is fully dry for the best crust.
