Description

A delightful baked cod dish featuring a crispy panko and Parmesan crust, perfect for family gatherings or weeknight meals.


Ingredients

  • 4 cod fillets, fresh or thawed if frozen
  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley or dill, chopped
  • 1 lemon, for juice and wedges
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the cod fillets dry with paper towels.
  3. In a mixing bowl, combine panko breadcrumbs, grated Parmesan, minced garlic, chopped herbs, salt, and pepper. Drizzle in olive oil and mix until crumbly.
  4. On a greased baking sheet, lay out the cod fillets and generously top with the panko mixture.
  5. Bake for 12-15 minutes until the fish is cooked through and the crust is golden brown.
  6. Allow to cool for a couple of minutes, then serve with lemon wedges and your favorite sides.
