- 1 cup freshly grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano or Italian seasoning
- Olive oil for drizzling
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel onions and slice them into approximately 1/4-inch thick rings.
- Set up a three-bowl assembly line: whisk eggs in one bowl, mix breadcrumbs with Parmesan and seasonings in another, and keep the third bowl for sliced onions.
- Dip each onion slice into the egg wash, letting excess drip off, then transfer to breadcrumb mixture and press to adhere.
- Place the breaded onion rings in a single layer on the lined baking sheet and drizzle with olive oil.
- Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.
- Let cool slightly before serving with your favorite dipping sauce.
