Ingredients

- 4 medium-sized potatoes (Russets or Yukon Gold)
- 2 cloves garlic, minced
- 1/4 cup chopped parsley or green onions
- 1/2 cup cheese (optional: cheddar, mozzarella, or feta)
- 2 eggs, beaten
- 1 cup bread crumbs (Panko preferred)
- Salt and pepper to taste
Instructions
- Peel and boil the potatoes in salted water until tender (15–20 minutes). Drain and cool slightly.
- Mash the warm potatoes until smooth in a mixing bowl.
- Stir in minced garlic, chopped herbs, cheese (if using), and beaten eggs. Season with salt and pepper.
- Chill the mixture in the refrigerator for about 30 minutes.
- Form small golf ball-sized portions from the mixture.
- Roll each ball in bread crumbs until fully coated. For extra crunch, dip in egg and coat again with breadcrumbs.
- Heat oil in a deep skillet over medium-high heat. Fry small batches of potato balls until golden brown (about 4-6 minutes).
- Drain on paper towels and serve warm.
Notes
For added flavor, feel free to experiment with spices or additional ingredients such as sautéed mushrooms.
