- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
- ¼ cup granulated sugar
- 8 ounces dark chocolate (70% cocoa or higher)
- 1 ½ cups heavy cream
- 3 large eggs
- ½ cup granulated sugar
- ½ teaspoon peppermint extract (adjust to taste)
- Whipped cream (for topping)
- Crushed peppermint candies (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs, melted butter, and sugar in a bowl. Mix until well-coated and press evenly into a tart pan. Bake for 10-12 minutes until golden. Cool.
- Melt dark chocolate in a double boiler. Remove from heat and let cool slightly.
- Whip heavy cream until soft peaks form.
- Whisk eggs and sugar until pale and fluffy. Gradually mix in cooled chocolate.
- Gently fold whipped cream into chocolate mixture in three additions. Add peppermint extract.
- Pour mousse into cooled tart shell and smooth the top. Cover and refrigerate for at least 4 hours or overnight.
- Serve topped with whipped cream and crushed peppermint candies.
Notes
Chill your utensils for whipping cream. Let the mousse set overnight for the best flavor.
