- 1 cup Medjool dates, chopped
- 1 cup walnuts, chopped
- 1 ½ cups all-purpose flour (or almond flour for gluten-free)
- ½ cup granulated sugar
- ½ cup brown sugar (or coconut sugar)
- 3 large eggs (or flax eggs for vegan)
- ½ cup unsalted butter, softened (or coconut oil)
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 tsp vanilla extract (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- Chop the dates and toss them in a small bowl with a little flour to prevent sinking.
- In a separate mixing bowl, cream the butter and sugars together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Incorporate the dry ingredients into the wet mixture, mixing until just combined.
- Fold in the walnuts and prepared dates gently.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
