- 4 medium-sized Granny Smith or Honeycrisp apples
- 8 oz cream cheese, at room temperature
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 tbsp freshly squeezed lemon juice
- 1/2 cup crushed graham crackers
- 1 tsp cinnamon
- 2 tbsp butter, cut into small pieces
Instructions
- Preheat your oven to 350°F (175°C).
- Core the apples, leaving the bottom intact, and arrange them in a baking dish.
- In a mixing bowl, blend cream cheese until smooth. Add sugar, vanilla, and lemon juice, mixing until well combined. Fold in the crushed graham crackers and cinnamon.
- Generously fill each apple with the cheesecake mixture.
- Dot the tops with small pieces of butter and sprinkle any leftover graham cracker crumbs on top.
- Bake for 25-30 minutes until the apples are tender but still hold their shape.
- Let cool for a few minutes and serve warm with ice cream or caramel sauce.
Notes
For a gluten-free option, substitute graham crackers with gluten-free cookies. Consider adding flavored cream cheese or sour cream for variation.
