  • 8 oz cream cheese, at room temperature
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp freshly squeezed lemon juice
  • 1/2 cup crushed graham crackers
  • 1 tsp cinnamon
  • 2 tbsp butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Core the apples, leaving the bottom intact, and arrange them in a baking dish.
  3. In a mixing bowl, blend cream cheese until smooth. Add sugar, vanilla, and lemon juice, mixing until well combined. Fold in the crushed graham crackers and cinnamon.
  4. Generously fill each apple with the cheesecake mixture.
  5. Dot the tops with small pieces of butter and sprinkle any leftover graham cracker crumbs on top.
  6. Bake for 25-30 minutes until the apples are tender but still hold their shape.
