Description

Ingredients

  • 2 Cucumbers, diced
  • 1 cup Bell Peppers, diced (mixed colors)
  • 1 cup Cherry Tomatoes, halved
  • 1/2 Red Onion, thinly sliced
  • 1 cup Feta Cheese, crumbled
  • 1/4 cup Fresh Herbs (parsley, basil, or mint), chopped
  • 1/4 cup Olive Oil
  • 2 tbsp Lemon Juice
  • Salt and Pepper, to taste
  • 1 tsp Honey (optional)

Instructions

  1. Wash and prepare all the vegetables. Chop the cucumbers, bell peppers, and tomatoes into bite-sized pieces.
  2. Thinly slice the red onion and soak it in cold water for 10 minutes to mellow its flavor. Drain before adding to the salad.
  3. In a large mixing bowl, combine the chopped vegetables with the crumbled feta cheese. Toss gently to mix.
  4. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper. Optionally mix in honey for sweetness.
  5. Drizzle the dressing over the salad and toss gently to combine, ensuring the feta remains intact.
  6. Add chopped herbs and give the salad a final toss.
  7. Taste and adjust seasoning before serving.
