- 2 Cucumbers, diced
- 1 cup Bell Peppers, diced (mixed colors)
- 1 cup Cherry Tomatoes, halved
- 1/2 Red Onion, thinly sliced
- 1 cup Feta Cheese, crumbled
- 1/4 cup Fresh Herbs (parsley, basil, or mint), chopped
- 1/4 cup Olive Oil
- 2 tbsp Lemon Juice
- Salt and Pepper, to taste
- 1 tsp Honey (optional)
Instructions
- Wash and prepare all the vegetables. Chop the cucumbers, bell peppers, and tomatoes into bite-sized pieces.
- Thinly slice the red onion and soak it in cold water for 10 minutes to mellow its flavor. Drain before adding to the salad.
- In a large mixing bowl, combine the chopped vegetables with the crumbled feta cheese. Toss gently to mix.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper. Optionally mix in honey for sweetness.
- Drizzle the dressing over the salad and toss gently to combine, ensuring the feta remains intact.
- Add chopped herbs and give the salad a final toss.
- Taste and adjust seasoning before serving.
Notes
Dress the salad just before serving to keep it crisp. Feel free to customize with additional ingredients like chickpeas, avocado, or nuts.
