A warm and nourishing Detox Soup featuring fresh vegetables, herbs, and a light broth, perfect for detoxifying and comforting.
Ingredients

- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cups kale, chopped (or spinach/chard)
- 1 cup cremini or shiitake mushrooms, sliced
- 2 cloves garlic, minced
- 1 onion, diced
- 4 cups vegetable broth (or chicken broth)
- 1 tablespoon olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh herbs (such as parsley or thyme) for garnish
Instructions
- Prepare your ingredients by washing and chopping all vegetables into bite-sized pieces.
- In a large pot, heat olive oil over medium heat. Add minced garlic and diced onion, sautéing until fragrant and translucent (about 3-4 minutes).
- Add carrots, celery, and mushrooms, stirring to combine. Sauté for another 5 minutes.
- Pour in the broth and bring to a gentle boil. Reduce heat to simmer.
- After 10 minutes, add kale or spinach and let it wilt for another 5 minutes.
- Stir in lemon juice, season with salt and pepper to taste.
- Ladle soup into bowls and garnish with fresh herbs and a drizzle of olive oil if desired.
Notes
Feel free to mix and match vegetables based on what you have. This soup is very adaptable.
