Description

A warm and nourishing Detox Soup featuring fresh vegetables, herbs, and a light broth, perfect for detoxifying and comforting.


Ingredients

  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups kale, chopped (or spinach/chard)
  • 1 cup cremini or shiitake mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 4 cups vegetable broth (or chicken broth)
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or thyme) for garnish

Instructions

  1. Prepare your ingredients by washing and chopping all vegetables into bite-sized pieces.
  2. In a large pot, heat olive oil over medium heat. Add minced garlic and diced onion, sautéing until fragrant and translucent (about 3-4 minutes).
  3. Add carrots, celery, and mushrooms, stirring to combine. Sauté for another 5 minutes.
  4. Pour in the broth and bring to a gentle boil. Reduce heat to simmer.
  5. After 10 minutes, add kale or spinach and let it wilt for another 5 minutes.
  6. Stir in lemon juice, season with salt and pepper to taste.
  7. Ladle soup into bowls and garnish with fresh herbs and a drizzle of olive oil if desired.
