Ingredients
- Mini pumpkins
- Mozzarella cheese
- Parmesan or cheddar cheese (optional)
- Tomato sauce
- Bell peppers, onions, or olives
- Olive oil
- Garlic
- Oregano
- Basil
- Salt
- Pepper
- Crushed red pepper (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the pumpkins: Wash and slice off the top of each mini pumpkin. Scoop out the seeds and stringy flesh.
- Sauté onions and garlic in olive oil until fragrant, add vegetables and saved pumpkin flesh, cooking until tender.
- Stir in cooked ground meat or lentils, followed by tomato sauce, herbs, and seasonings. Simmer for a few minutes.
- Mix in the cheese until melted.
- Generously fill each hollow pumpkin with the prepared mixture.
- Place the pumpkins in a baking dish, add a splash of water, cover with foil, and bake for 30 minutes.
- Remove foil and bake an additional 15 minutes until tender.
- Let cool slightly before serving.
Notes
Consider topping the filled pumpkins with additional cheese before baking for a golden crust.
