Description

Ingredients

  • Mini pumpkins
  • Mozzarella cheese
  • Parmesan or cheddar cheese (optional)
  • Tomato sauce
  • Bell peppers, onions, or olives
  • Olive oil
  • Garlic
  • Oregano
  • Basil
  • Salt
  • Pepper
  • Crushed red pepper (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the pumpkins: Wash and slice off the top of each mini pumpkin. Scoop out the seeds and stringy flesh.
  3. Sauté onions and garlic in olive oil until fragrant, add vegetables and saved pumpkin flesh, cooking until tender.
  4. Stir in cooked ground meat or lentils, followed by tomato sauce, herbs, and seasonings. Simmer for a few minutes.
  5. Mix in the cheese until melted.
  6. Generously fill each hollow pumpkin with the prepared mixture.
  7. Place the pumpkins in a baking dish, add a splash of water, cover with foil, and bake for 30 minutes.
  8. Remove foil and bake an additional 15 minutes until tender.
  9. Let cool slightly before serving.

Notes

Consider topping the filled pumpkins with additional cheese before baking for a golden crust.
